Fennel salad to the Eastern one

Portion for 2 people.

1 fennel Sauce: 1 C. with oil soup of colza

1 red apple 2 C. with vinegar soup

4 dried dates ½ C. with coffee of curry

1 orange peeled with a sharp little salt

1 pepper 1 point sugar pinch


For sauce, to mix all the ingredients in a pot. To wash fennel, to cut it into four and to grate it directly in sauce. To detail apple, orange and dates in fine thin straps and to mix at once with sauce to avoid oxidation.


Maghrebian Taboulé

Portion for 4 people.

250 G of couscous Sauce: lemon-yellow ¼ untreated: grated peel

4 dl of vegetable stock 5 C. with lemon juice soup

1 onion, 1 green onion (cébette) 1 ½ dl of olive oil

1 cucumber ½ bunch of parsley to large sheets

3 tomatos 15 mint sheets

flower of salt, pepper of the mill

Bread salad - panzanella

Portion for 4 people

300 G of white bread ½ flat bunch of parsley

1 water dl 3 C. with caper soup

1 red wine vinegar dl 3 C. with oil soup

1 sheet of bay-tree 3 cloves of garlic

300 G of tomatos paprika, salt, pepper

2 sweet peppers, a yellow and a red fresh basil small bouquet

2 onions fresh mint small bouquet


Day before, to remove the crust of the bread, to cut the crumb in sections and to let rassir. To briefly carry water and the vinegar to boiling with the sheet of bay-tree. To sprinkle the bread with the mixture, to let rest 30 minutes. To drain, detail the bread in small pieces and to withdraw the sheet of bay-tree.
